We kept three that repeatedly earn their keep in real apartments — not a 40-piece “as seen on TV” drawer.

1. An instant-read thermometer

Overcooked chicken and guesswork are expensive. A basic thermometer stops ruined dinners and food-safety stress. Use it for meat, bread, and even oil temperature when frying.

2. A sharp chef’s knife (or a steel + one good knife)

Dull knives slow you down and cause accidents. One solid 8-inch chef’s knife plus occasional honing beats a block of twelve mediocre blades. Faster prep means fewer delivery orders on tired nights.

• Learn one knife skill well: onion, garlic, and protein prep.
• Hand-wash good knives; dishwashers ruin edges and handles.

3. Aerosol-free oil sprayer or sheet-pan setup

What we skip

Single-purpose slicers you use twice a year, cheap nonstick that peels in months, and bulky appliances that only make one cocktail. Borrow or skip until you’ve cooked the same recipe three times.
